Carrot and coriander soup is a magical, warming combination of flavours that is also easy to whip up at the end of a busy day.

Ingredients
• Bag of carrots
• 1 onion
• ½ bulb of garlic
• 1 tbsp coconut oil
• 1 tsp ground coriander
• 1 handful fresh coriander
• 1 potato
• 2 knorr chicken stock cubes
• 1 litre water

Method
1. Finely chop onion, mince the garlic warm gently with the coconut oil and a dash of salt until fragrant.
2. Add the chopped carrots and potato, stock cubes, water and coriander.
3. Cover and simmer for around 30 mins.
4. Pop in a blender and mix through.
5. Return to pan and heat through.
6. Add salt/pepper to taste.
7. Serve!

Serves: 8-12 servings
