We’ve been given apples left, right and centre by friends and family, and it seem this year was an especially good one for the UK’s beloved apple trees. So it’s been stewed apple with yoghurt for breakfast and too many apple crumbles to count! This recipe has developed over the last few weeks, as we realised we liked the apples to have a hint of a bite to them, rather than be completely stewed, so you don’t cook them first. This is about the right amount of sugar for our tastes, but experiment with your family’s tastes and adapt the amounts of sugar for sweeter or more tangy apples. Delicious served with ice cream, cream or home-made custard, it’s a family favourite.

Ingredients:

  • 1kg apples, peeled and cored
  • 100g Demerara sugar
  • 75g oats
  • 75g plain or wholemeal flour
  • 100g butter
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger

How to make:

  1. Preheat oven to 190C/ Gas mark 5. Lightly butter the inside of a baking dish.
  2. Thinly slice apples and layer along the bottom of the dish until all the apples have been used up. Sprinkle 25g of the sugar over the apples.
  3. To make the topping, make sure the butter is at room temp and cut into small cubes and place in a bowl. Add 75g of the sugar, the oats, flour, cinnamon and ginger. Mix with your fingertips until the mixture resembles breadcrumbs. (Add a tbsp. of water – this is optional but creates a slightly more cake-like topping which we love.)
  4. Place in the oven for 40-45 minutes, until the top is golden brown.
  5. Serve warm with ice cream, custard or cream.
