Chocolate bark is a bit like rocky road. It’s smooth chocolate, filled with yummy treats and goodies. It’s also super easy to make and the paleo version is crammed with healthy goodness. Now you can enjoy chocolate without the added guilt. Perfect, just in time for your new year health resolution!

Ingredients:
• 400g dark chocolate (dairy free)
• 1 tbsp coconut oil
• 3 tbsp chopped macadamia nuts
• 3 tbsp chopped dried apricots
• 3 tbsp chopped dried cranberries
• ½ tsp sea salt
Method:
1. Melt the chocolate in a heavy glass bowl over a pan of simmering water.
2. Mix in the rest of the ingredients.
3. Line a baking tray with greaseproof paper and pour in the mixture.
4. Leave too cool and then pop in the fridge to set.
5. Once set, snap into rough pieces and store in an airtight container in the fridge.
