katie has asked for snacks rather than being overwhelmed by meals for now and has agreed to them being higher in calories, for instance today 2 digestive biscuits with peanut butter on, she ate with no problem
xx

So thrilled to hear this massive step forward. You’ve just given me my best Yule present smile
Blessings to you and your special girl xxx

Crusty bread with different cheeses, avocado, nut butters? If your daughter likes desserts maybe creamy rice pudding or fruit pies and crumbles with custard or cream. Good Luck smile  x

Here’s the recipe I promised.

Chewy fruit and seed slice

200g unsalted butter
175g golden syrup or maple syrup
125g crunchy peanut butter
2 tsps natural vanilla essence
30g plain flour
30g ground almonds
1/2 tsp mixed spice
300g rolled porridge oats
2tsps finely grated orange zest
185g soft brown sugar
45g desiccated coconut
50g sesame seeds, toasted (although I substitute this with linseed)
90g pumpkin seeds or sunflower seeds (or a mixture)
80g raisins
45g mixed peel (although I just add extra fruit of whatever is in the cupboard!)

1 Preheat the oven to 170c gas 3.  Lightly grease a 20x30cm (8x12 inch) shallow tin, and line with baking paper, leaving it hanging over the two long sides.
2 Place the butter and golden syrup in a small saucepan over a low heat, stirring occasionally until melted.  Remove from the heat and stir in the peanut butter and vanilla extract until combined.
3 Mix together the remaining ingredients, stirring well.  Make a well in the centre and add the butter and syrup mixture.  Mix with a large metal spoon until combined.  Press evenly into the tin and bake for 25 minutes, or until golden.  Cool in the tin, then cut into squares.

It does have alot of ingredients, but I think it is well worth it.  Hope K likes it.
