freezable cake recipes please!

Vegan or not, it doesn’t matter as they are for DH to take to work - thinking if I make some that I can freeze, I wont be able to scoff them all!

cakey/scone-y/flapjacky type things, preferably healthy too!

Muffins all the way, you can take them out indivually then and they will have defrosted during his morning at work.  I have a great muffin book I use all the time

Hi, I freeze all our cakes/ muffins/ scones - the only thing I don’t freeze is fillings or icing - if a cake needs this, I freeze the top and bottom seperatly and then defrost and fill / ice when I need too smile  If I’m not sure what will happen to a recipe after it’s defrosted, I make a batch ahead of time, freeze for a week then defrost to see if it works or not:)

theres a really good website ‘super healthy kids’ I ‘ve been using their recipes for a while now x

Shortbread is fab. It keeps forever in an airtight tin, so you don’t even need to use the freezer.

Aye any sponge cake can be frozen.

I agree muffins are fab because they defrost quickly, and taste baked that day and obviously you can make whatever type you like and freeze.

I believe you can freeze butter icing and you can freeze double cream, solong its been whipped up….. but I personally find it easier to not to.
