Please? I have an enormous one in the veg box. Will make some coleslaw but I reckon I could feed the village on this beast! Would love to hear your suggestions…

Well I had never cooked white cabbage until we started getting a veg box last year.  It made me think of school dinners, but it’s actually yummy.
The first ideas that spring to mind:
It’s great in soup/stews
The boys like it chopped lightly fried with some nuts and seeds, and a drizzle of maple syrup.
Bubble and squeak

Juice it!

Apples
Cabbage
Carrot
Lemon
Ginger
Beetroot.

Even add 1/4 of a pineapple too, if you like your juices sweet, (I’m starting to prefer veggie juices so using less apple/pineapple these days)

And if you want to turn it into a filling smoothie (i.e. to say replace lunch)
Blitz with 1/2 an avocado.

Remember to pack the lemon, ginger, cabbage inbetween the two apples as that will help you to receive maximum juice extraction from those ingredients.

Bubble and squeak - fab idea, such a comfort food. Your hardcore joxy! I’ve read that cabbage juice is about the best ‘cure all’ you can find, I’ll get hubby to try it for sure wink

Fry off an onion with some cinnamon or maybe cumin, add chopped cabbage and (lots of as I love them) raisins and a little water and some vinegar (small amount of apple cider or balsamic here) or lemon juice and some sweet freedom or maple syrup or sugar.  Then cook long and slow until softened (maybe 40mins) on top of stove.  Taste and add, as necessary - more spice, more vinegar / lemon juice, more sweet stuff, veg bouillon, mix and cook some more if not soft enough and try again.  Serve (with mash and homemade beanburgers for preference).  The only way I really love cabbage.  But yes, coleslaw and some in veg soup are my only other suggestions.

I too never ate cabbage until we got the veg bag.  Now, I actually grow it on the allotment!
