Hi all

My kids LOVE sandwiches- in fact they would eat sandwiches for BL &T- if I would let them!

However I am bored of the same old same old….

Can you suggest any variations- anything other than cheese, cheesy spread + cucumber, ham & mustard, pate etc

We aren’t Veggie/or vegan (obviously from above) but will quite happily eat veggie/vegan (ie I don’t feel shortchanged if I don’t have protein in!)- but we do try to eat locally/seasonally.

We do often have egg for breakfast- so don’t really want eggy options but other than that hit me with your best!!!Imaginative! Creative! Exciting!

Anything!

Ooo, what’s the recipe for tomato and lentil paste? That sounds gorgeous!

Angie

125g red lentils
200ml water (I always need more)
25g butter/spread
1tbsp tomato puree (I use 2)
few drops of lemon juice
salt and pepper

Boil the lentils in the water until soft then beat in butter and tomato puree to make paste, add lemon juice and seasonings to taste.

Soooo yummy, my staple smile

Going to try the lentil/ tom paste - thanks for that smile

We have hummus, hummus and sweetcorn mixed with tuna, peanut butter and grated apple (in wraps and chopped into ‘wheels’), dark choc spread and peanut butter,  salami (and cheese), cheese and marmite, plain tuna, chicken and sweetcorn, BLT.

Super healthy kids website has lots of good lunch suggestions too smile

A large helping of humour and cucumber would have gone down well here today wink

I am loving these suggestions, I shall be trying the lentil and tomato paste. What a great thread.

Maybe put some salsa and guacamole (or plain avocado) in to spice up your sandwich (I don’t eat meat but when I did those two go very nicely with chicken!)

I’m also going to try the lentil-tomato spread!  Thanks for the recipe!

If you like toasted sandwiches, brie or Camembert topped with thin slices of apple or pear is lovely (we find)—just toast the cheese lightly before you put the fruit on.

We also like:

goats cheese with cucumber, chives, cress, baby spinach, or grated beetroot
labneh (Lebanese yoghurt cheese) with any of the above
mashed avocado with a few drops of lemon and some salt
tomato-sauce-packed sardines mashed up with a fork, mixed with butter and minced shallot
just about any beans (black, white, red) mashed up and mixed with chopped tomato
humous with roasted red sweet peppers
peanut butter (or almond or cashew) with sliced banana and honey
thinly sliced mushrooms cooked in cream or simply browned in butter

That is DELICIOUS! Thank you, guess what we’re having for lunch?! If I can resist just eating it all out of the pan and actually manage to leave some for the children…

We have tons of humous, avocado, cheese, tuna and marmite here. I have always hated sandwiches but I’m forcing myself to get used to them because the children all love them and I do think they’re a lot nicer with homemade bread - and that paste!!
