energy balls….recipes please

lets have all your energy ball and similar recipes….trying to find handy little enery snacks for me and kids.anybody here make them?

Do you have a food processor/magimix?  If so this is what I make every other day:

2 cups nuts, ie brazils and walnuts
1/3 tpo 1/2 tub of G& B cocoa powder
2-3 large tablespoons of virgin coconut oil
1 cup of soft pitted dates

that is the basic mixture.  To this you might want to add some pollen, or seeds, or buckwheaties or dried coconut etc….  This is fantastically filling.  I blitz it to a crumb and then the dates and coconut oil sort of pull it together, flatten it into a tin and then refrigerate.  Cut into squares when hard and cold.  Otherwise form into balls and then refrigerate.

refound this in my Kundalini Yoga recipe book literally just a minute before coming on here:

17 pitted dates
little water
3/4 cup mixed nuts and seeds best to have a mixture of pumpkin seeds, sunflower seeds, brazils, almonds, walnuts or pecans but you can use any.
3/4 cup of coco or carob powder
Honey
Dessicated coconut

method:

* place dates in bowl, cover with just boiling water for a few minutes.

* Drain dates, reeserve liquid, place dates in food processor add half the reserved liquid and process at medium speed.

* Slowly pour in nut and seed mix add carob/coco powder and a little more water if nessecary to form a rough paste - careful not to add so much water it makes the mixture too sticky to roll into smooth balls with you hands.

* remove past from processor to a glass bowl, chill for roughly an hour

* when chilled tear off small portions about size of walnut and roll between hands.

* to finish, roll each ball in the coconut.

Can be refrigerated or eaten straight away.

We make the ‘empty cupboards’ version - in food processor, blend brazils, cashews, hemp seeds or almonds if we have them, with dates then roll the mixture into balls. I don’t like coconut much so these work well for us! xx
