We made butternut squash cakes today (Jamie Oliver recipe).

They taste a bit like carrot cake. Me and the lo's loved them but DH spat it out and said that veg in cakes is just wrong…..what does he know!

Mmm, we love butternut squash in this house, I do the recipe out of the last green parent mag its great, and a nigella recipe of butternut squash with blue cheese and pecan nuts.

Would love the recipe for the cake if you get chance to post it.

Although yummy I think Dh will explode if I make another earl grey tea cake!!

I made a butternut squash risotto recently but I wont be making it again!

My daughter and I quite liked it, my husband who eats anything couldn't manage more than a few mouthfuls and my 4 year old son announced in a very polite voice "mummy, if I eat this I'm going to be sick!!"

Not one of my most successful days in the kitchen!

That's a shame!  Both my girls love 'sotto as Miri calls it!  We have 'normal 'sotto' (usually with peas, sweetcorn, carrots & a tin of mackerel in), yellow 'sotto (with squash of some kind, whatever comes in the veg box), green 'sotto (with spinach) and the most recent one pink 'sotto (with beetroot ;D

Our favourite supper right now is Eggs Florentine. Simple, nutritious comfort food. It is a rice base (we like brown basmati best) with cooked spinach on top, then chopped hard boiled eggs (hot) and cheese sauce on top. It is as comforting as cheesy pasta, but more interesting and nutritious.
