Spices for bhajees

I never can get the spices quite right when making bhajees, I have a recipe for oven baked bhajees which come out a lovely texture but I am not happy with the spices, just a bit to bland and having tried messing around with quantities and adding different spices can’t seem to get it right.

What spices would you use?
If you have a very easy recipe feel free to share that too wink

I usually grind up coriander seeds, cumin and fenugreek, then add in some garam masala and a bit of chilli powder. I don’t really follow any recipe, but these are the standard spices I use when making an Indian recipe. I don’t even know why I use fenugreek but my mum always uses it in cooking so I chuck it in anyway (my parents are Sri Lankan)

Have to say I don’t always use buckwheat flour if I haven’t got any, use gram flour or imrovise with other flours in cupboard smile

I’d probably add curry leaves to the bhajees too, these are widely used in Sri Lankan cooking and give a really lovely flavour which makes it taste quite different to (north) Indian food
