When I first decided to go dairy free, hot chocolate was one of things I mourned the most. In a former, dairy loving, life I would melt a bar of milk chocolate into some full fat milk and serve. Heaven! So, I set about working on a suitable alternative. Not just good, but equally indulgent and delicious. After lots of experimentation I am pleased to bring you this fabulously healthy, rich and creamy hot chocolate recipe. It might not be the best time of year for it, but I just couldn’t keep it to myself for another minute! Enjoy!

Thick & Creamy Dairy Free Hot Chocolate

Ingredients:
• 3 tablespoons of cocoa powder
• 1 tin coconut milk
• ½ cup honey

Method:
• Add the coconut milk and cocoa powder to a pan, whisk together for a few minutes until smooth.
• Place on the hob and gently warm though, do not boil.
• Add the honey (more or less than stated, to taste) and mix through until the mixture darkens. Do not bring to the boil, remove when warm enough for your liking.

Serves: 2 adults and 2 children, or 1 greedy adult and 1 greedy child (i.e. me and my dairy free child!)
