This simple stir fry of noodles and vegetables is fresh, crunchy, and delicious. Play around with different types of noodles, from spaghetti to udon and rice noodles. With thanks to The Organic Baby Food Book!

Ingredients:
½ cup noodles
2 teaspoons olive oil
1 spring onion, chopped
½ teaspoon minced garlic
4 button mushrooms, sliced
2-3 broccoli florets
¼ cup sliced peppers
Directions:
Cook the noodles as per the instructions on the packet. Drain and set aside. Add the olive oil to a pan over medium-high heat. When the oil begins to shimmer, add the spring onion and garlic and cook for 30 seconds, stirring constantly. Add the vegetables and cook for 6 to 7 minutes, or until soft. Add prepared noodles and mix until combined. Serve as is or chop into pieces.
