The holy grail of clean eating is the perfect grain free pizza. I’ve tried everything from almond meal mixed with egg and spices to tapioca starch with water and egg to make a good base and even thrown in the towel and attempted to innovate, rather than replicate, with the invention of a Meatza (it was just a giant bun-less burger…)! Eventually, I just gave up and resigned our family to a life sans Pizza. That is, until I discovered the recipe for a fathead pizza.

Popular with the low carb, high fat movement. Fathead pizzas aren’t for me, with their high dairy content, but the rest of the family have been thrilled with the results and don’t seem to miss regular pizza all that much anymore. Well worth a try!

Ingredients:
• 1 ½ cups mozzarella (shredded)
• ¾ cup almond flour/almond meal
• 2 tbsp cream cheese
• 1 egg
• Dried garlic
• Salt
• Dried herbs of your choosing
• Parchment paper
Method:
• Preheat the oven to 190
• Melt the cheeses together (much easier to achieve in a microwave) and mix together in a bowl with almond flour, egg and dried herbs. The mixture should easily combine into a dough.
• Flatten out the dough and sprinkle with dried garlic and salt, poke a few holes with a fork
• Bake in the oven for 8 minutes
• Poke the pizza a few times again (pop any bubbles) and return to oven for another 6 minutes
• Add toppings and return to the oven until cooked through or cheese topping is fully melted
• Serve!
