A simple yet tasty recipe, this is sure to be a hit with all of your friends. Allergen free, yet still deliciously creamy, this is one recipe I am happy to see making a comeback as the cold weather rolls in. Packed with nothing but goodness and good on a budget, this is a great all rounder.

Ingredients
• 4 tins of chopped tomatoes
• 2 Onions
• ½ bulb of garlic
• 1 tbsp coconut oil
• Handful fresh basil
• 1 tbsp dried basil
• 1 litre of water
• 2 Knorr vegetable stock cubes

Method
1. Finely chop onions and mince the garlic, warm gently with the coconut oil and a dash of salt.
2. Add the chopped tomatoes, stock cubes, water and fresh basil.
3. Cover and simmer on low for around 2 hours.
4. Pop in a blender and mix through.
5. Return to pan and heat through with dried basil.
6. Serve!

Serves: 8-12 servings
