Cherry Almond Granola Bars

I once purchased dried cherries in bulk thinking they were dried cranberries. They sat in my pantry for a few months until I realized that they could be used in my almond granola bars.

These granola bars are the perfect go-to treat for active days when you need something to satisfy that sweet tooth without straying from your goals. The cherry and almond combo sets them apart, but if you don’t have dried cherries on hand, swap them for dried cranberries or blueberries.

Yield: 12 bars

• 160 g old fashioned oats

• 40 g brown rice cereal

• 24 g unsweetened shredded coconut

• 30 g chopped almonds

• ¼ teaspoon salt

• 125 g almond butter

• 170 g honey

• 1 teaspoon vanilla extract

• 90 g dried cherries

1. Line a 22 cm x 33 cm pan with parchment paper.

2. In a large bowl, combine the oats, cereal, coconut, almonds, and salt.

3. Combine the almond butter, honey, and vanilla extract in a pan and gently heat until the mixture is melted.

4. Pour the honey mixture into the oat mixture and stir to combine. Add the cherries and fold to mix.

5. Transfer the granola mixture into the prepared pan and press down in an even layer. Cover with plastic wrap and place in the refrigerator until solid, for about 1 hour.

6. Remove bars from refrigerator and cut into 12 squares.

Kitchen Note - Store leftovers in an airtight container for a week.
