Google Bara Brith. Welsh fat free fruit loaf.

Tea bread? Not actually cake but very nice with a cuppa? Soak dried fruit in a pint if strong cold tea. Add two whisked eggs, half a up of sugar and abbout two cups of self raising flour flour until its cake mixture consistency. Add mixed spice, chopped nuts etc to taste and bake at 180 for 45 mins to an hour ...this fills two average loaf tins. Not got exact measurements as I don’t actually weigh anything, I just add milk if it’s too thick and more flour if runny x

Weetabix cake is fat-free.

2 crushed weetabix (or own brand equivalent)
2 cups SR flour
1 cup sugar
1 cup mixed fruit
1 cup milk (or redbush tea works well. Soya milk does for some reason. - doesn’t rise!)
1 heaped tsp mixed spice
1/2 tsp (or less) salt

Mix together, put into greased/oiled floured loaf tin (it does need to have some lubrication or it really sticks as there’s no fat in the cake to help) and bake for about 1.5hrs at 140c,

Very crunchy top, best served sliced with lashings of butter wink

Rizz, have you ever tried your tea bread with redbush or other herbal teas? I’m allergic to caffeine, but it sounds great!

Bars Brtith is basically welsh tea bread and I make mine with red bush as caffeine makes me loopy wink

fat free sponge - - although that recipe is filled with cream!
I make swiss roll with jam filling if I have no butter
