Have LOADS of ripe bananas to eat up and I thought I might make a banana cake tomorrow,so just wondering if you ladies have any delicious (prefereably sugar free) recipes…..?

Mummy to 4

I make this sugar-free banana loaf. I like it on its own but my ex used to cut it into slices and have margarine on it so more like a raisin bread type thing, maybe bit denser than cakey, it’s not crumbly but lovely and moist and the fruit and nuts are lovely in it.
Wholegrain too smile
-3 large mashed bananas
-1/2tsp salt
-2tsps cinnamon
-2 eggs
-1 cup milk
-2 cups wholemeal self-raising flour
-1 tbsp butter (easier if you melt it)
-1/2 cup chopped walnuts
-1 cup chopped dates and raisins/sultanas mixed.

Milk and eggs in bowl and beat.
Add flour and stir in.
Add salt and cinnamon.
Mix in butter and bananas.
Add nuts and fruit.
Pour mixture into greased loaf tin.
Oven at 175 C for 50-60 min.
Leaf to stand for a few mins before taking out of tin.

Thanks the-libran,that sounds lovely!!
