There’s three of them about to crawl out of the fruit bowl. DD would like a sugar free banana cake. Do you have a fave recipe that perhaps uses honey or molasses?

Not a cake, but these are lush- they are from a thread ages ago for sugar free flapjacks. Think it was mummybee’s recipe:

Banana flapjacks

150g butter/marg
4tbsp honey
270g porridge oats
2 ripe mashed bananas
pinch of cinnamon
1/2tsp baking powder
125g dried fruit of your choice(dates,apricots,sultanans,figs…..) chopped
75g nuts of your choice(cashews,hazels,almonds…....)chopped
75g seeds (pumpkin,seseme,sunflower,hemp)


Melt butter and honey in a saucepan then add all other ingredients and bake in oven for about twenty mins or so,until golden.

115g butter at room temp
115g sugar, but last few times I’ve used about 90g agave syrup instead and it’s been great, so I’m sure you could use honey
2 eggs
170g flour (I use gluten free, but the recipe suggests 2/3 white and 1/3 wholemeal)
1tsp bicarb (if using gf flour, try 2 tsp baking powder)
pinch salt
1 tsp cinnamon
3 large ripe bananas, mashed
1 tsp vanilla essence
55g chopped walnuts (although I’ve made without any nuts or with sunflower seeds)

Oven to 180C, grease and line loaf tin.  Cream butter and sugar stuff together (I melt the butter and stir in syrup, but whatever), add everything except bananas and nuts and mix, then add bananas and nuts.  Put in tin, bake for about 50-60 mins. Let stand for 10mins before turning onto rack.

This is lush, especially warm. Don’t need butter (but can if you wish wink ).  It’s like a sweet buttery bananery cake.  Yum

1 egg
about 100g plain flour
1tsp baking powder
1/2 tsp soda bicarb.
a bit of melted butter or oil
