Having had a rummage through the fridge and veg box I’m finding rather a lot of swede, parsnips and sweet potatoes. What are your favourite ways to use these up?

Sweet potatoes are lovely in a vegetarian chilli.

Parsnip soup - bulked out with potato or apple
Sweet potatoes curried in a tomato garlic and ginger sauce
Mashed swede - my Dad used to love this with a poached egg on top!

Ooo, the mashed swede with egg on top - at first sounds vile, but I’m going to see what that’s like as I think it *could* be good LOL!

Cook them up together, then blend with a bit of fresh chilli, makes delicious soup!

Swede dauphinoise is lovely too.  I cook mine with a layer of slow cooked onions, garlic and paprika in the middle smile

Parsnip soup is lovely you can make it with spices or with an apple (sounds hideous but is lovely).

Sweet Potato you can bake like ordinary potatoes or make a sauce with leeks and feta and have it as a pie filling, jacket potato filing or with mash.
